Cake Ingredients:

3 cups all-purpose flour

2 cups granulated sugar

1 tsp baking soda

1 tsp ground cinnamon

½ tsp salt

2 cups chopped ripe bananas
-
1 cup drained crushed pineapple
-
1 cup vegetable oil
-
2 large eggs, beaten
-
1 ½ tsp pure vanilla extract

1 cup finely chopped pecans
Frosting Ingredients:

8 ounces cream cheese (room temperature)
-
½ cup butter (room temperature)
-
4 ½ cups sifted confectioners’ sugar

1 tsp pure vanilla extract
Cake Instructions:

Preheat oven to 350F.

Grease and flour two 9-inch round cake pans. Place parchment rounds in the cake pounds.

In a large bowl, sift together the flour, sugar, baking soda, cinnamon, and salt together.

In a medium bowl, whisk together the bananas, pineapple, oil, eggs, and vanilla together.

Fold the wet mixture into the dry mixture. Fold until smooth.

Fold in the pecans.

Pour into pans equally and spread with a spatula.

Bake 30-35 minutes. Cool on a wire rack for 10 minutes. Flip the cakes and cool completely.
Frosting Instructions:

In a large bowl, beat the cream cheese and butter together.

On a low speed, slowly add the gradually the sugar. Add the vanilla until well combined.
Assembly
-
Place on cake layer of cake on a plate.

Cover the top with 2/3 cup of the icing.
-
Top with the second layer of cake.
-
Cover the top and sides of the whole cake with the remaining frosting.
