Carrot Cake

Ingredients Cake:

  • 4 1/2 cups sugar
  • 3 1/2 cups oil
  • 1 cup eggs
  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 2 cups pineapple puree
  • 2 cups pureed carrots
  • 1 1/2 cups pureed pumpkin

Ingredients Icing:

  • 8 oz. Butter
  • 1 lb. Cream Cheese
  • 2 lbs. powdered sugar
  • 2 teaspoon lemon juice
  • 2 teaspoon vanilla

Instructions Cake:

  1. Preheat oven to 325F.
  2. Grease and flour two 10″ rounds.
  3. In a large bowl, whip together the sugar, oil, and eggs. Whip until light and fluffy.
  4. Add in all the dry ingredients and mix well.
  5. Add the pineapple, carrots, and pumpkin and mix.
  6. Separate the batter into the two bowls.
  7. Bake for 1 hour.

Instructions Icing:

  1. In a large bowl, cream the butter.
  2. Beat in the cream cheese until it becomes soft.
  3. Add the remaining ingredients and mix until well blended.
