Ingredients Cake:
- 4 1/2 cups sugar
- 3 1/2 cups oil
- 1 cup eggs
- 2 cups sifted flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 teaspoon cinnamon
- 2 cups pineapple puree
- 2 cups pureed carrots
- 1 1/2 cups pureed pumpkin
Ingredients Icing:
- 8 oz. Butter
- 1 lb. Cream Cheese
- 2 lbs. powdered sugar
- 2 teaspoon lemon juice
- 2 teaspoon vanilla
Instructions Cake:
- Preheat oven to 325F.
- Grease and flour two 10″ rounds.
- In a large bowl, whip together the sugar, oil, and eggs. Whip until light and fluffy.
- Add in all the dry ingredients and mix well.
- Add the pineapple, carrots, and pumpkin and mix.
- Separate the batter into the two bowls.
- Bake for 1 hour.
Instructions Icing:
- In a large bowl, cream the butter.
- Beat in the cream cheese until it becomes soft.
- Add the remaining ingredients and mix until well blended.
