Brown Sugar Praline Cupcake

Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 ½ teaspoons baking soda

  • ¼ teaspoon fine sea salt

  • ¾ cup whole milk

  • 3 tablespoons molasses

  • 1 tablespoon pure vanilla extract

  • ½ cup (1 stick) unsalted butter, slightly softened

  • 1 cup lightly packed dark brown sugar

  • 2 large eggs

  • Brown Sugar Frosting

  • ¾ cup pecan halves, for topping

Instructions:

  1. Preheat oven to 350F.

  2. Place cupcake liners in cupcake pan.

  3. In a medium bowl, combine the flour, baking soda, and salt. Whisk together.

  4. In a small bowl, combine the milk, molasses, and vanilla. Stir together well.

  5. In a stand mixer with a paddle attachment on medium speed, cream together the butter and brown sugar.

  6. Reduce the speed to low and add one egg. Mix well. Add the second egg and beat well. Beat until creamy. It will take 1 to 2 minutes.

  7. Add half the flour mixture and mix. Add half the milk mixture and mix. Add remaining flour and mix. Add the remaining milk and mix. The batter may separate but that is expected.

  8. Separate the batter into the cupcake pan sections.

  9. Bake for 16-18 minutes until a toothpick can be inserted and comes out clean. Let cool on a wire rack.

  10. In a heavy-bottomed skillet, toast the pecans. Toast them for about 7 to 8 minutes. Let cool completely.

  11. Place the cooled pecans into a food processor and process until the pecans resemble breadcrumbs.

  12. Frost with brown sugar frosting and sprinkle with the processed pecans.
