What you will need;

4 egg whites, room temperature

1 cup of sugar

1/2 tsp cream of tartar

1/4 tsp peppermint flavoring

15 drops blue food coloring (or you can use gel food coloring like I did)
Let’s make some Will O’ Wisp Cookies

Preheat your oven to 200F.

Cover a baking sheet with parchment paper.

In a stand mixer with a whisk attachment, beat the egg whites and cream of tartar. When placing the eggs in the bowl, make sure there is no egg yolks get in the bowl or it won’t work well. The mixture will become light and frothy if properly done.

Once frothy, add the sugar 1 tablespoon at a time.

Add the peppermint flavoring and food coloring. Beat until combined.

Place a large tip in a piping bag. You can also cut a corner off a large ziplock bag. If you have a piping bag it will be easier.

Pipe the mixture in 2 to 3-inch tall swirls on the parchment paper. You want to leave at least an inch between each meringue.

Bake for 1 hour and then let cool on a wire rack. Cool completely before serving them.

These sound so easy to make and I’m always looking for a light dessert. I wonder how they would turn out with a low glycemic sugar option. I’ll have to try it.
