The Seven Dwarfs’ Caps

What you need:

  • 4 large egg whites

  • 1/2 teaspoon cream of tartar

  • 1 teaspoon vanilla extract

  • 2/3 cup granulated sugar

  • 2/3 cup confectioners’ sugar

  • Colored sugars

How to make them:

  1. Preheat your oven to 250F. It shouldn’t take long to preheat because that’s a very low temperature.

  2. Place parchment paper on a baking sheet.

  3. In a medium bowl, sift the confectioners’ sugar and the granulated sugar.

  4. In a large bowl, beat the egg whites, cream of tartar and vanilla. Beat for roughly four minutes until you reach soft peaks. Make sure the egg whites are room temperature and there is absolutely no water or egg yolks in the bowl. It’s best to do this on a medium speed.

  5. To the egg white mixture, add the sugar mixture one tablespoon at a time. Beat on high. After all the sugar is added, beat until stiff peaks are formed.

  6. Place the meringue in a piping bag or a large ziplock bag with the corner cut off.

  7. Squeeze a cone shape on the prepared baking sheet. First, try squeezing hard at the start and moving upwards while squeezing less. It’s ok if the tip flops over. That will make it look more like a Dwarfs’ hat.

  8. Sprinkle colored sugar over each hat. For best results use seven different colors.

  9. Bake for 20-30 minutes. You will know they are ready when they are crunchy on the outside and slightly crunchy or sometimes slightly creamy on the inside.
