Jasmin Frosted Fruit Jewels

Disney Inspired Recipe:

Source: The Disney Bakery – 30 Magical Recipes by Adrienne Berofsky.

Ingredients:

  • 12-16 ounces assorted fruits. You can use grapes, cherries, raspberries, blackberries or small strawberries.

  • 1 egg white

  • 1 cup sugar

Instructions:

  1. Rinse and dry the fruit. You want to make sure it’s clean and dry so the sugar will stick to the fruit later.

  2. Place a toothpick in each piece of fruit that doesn’t have a stem. I tried that but the fruit just rolled around. I say skip the toothpick and use your fingers.

  3. In a small bowl, lightly whisk the egg white.

  4. Using a pastry brush, lightly coat each piece of fruit. You need to coat them completely and then let the excess drain off. Again, they say hold the toothpick but then it would be hard to coat the bottom side.

  5. Hold the piece of fruit over an empty bowl and spoon sugar over the fruit. Do this very lightly or it will instantly clump up. Also, make sure you get both sides.

  6. Place on a wire rack and let dry in a warm space for several hours.

That’s really it. Pretty simple actually.  I don’t know if that counts as baking, but it 100% counts as something sweet. Sometimes you need a little sweet treat.
