Savory Bread Pudding with Applewood Smoked Bacon

Ingredients:

  • 3 Cups Low Sodium Chicken Stock

  • 1 cup Heavy Cream

  • 8 oz. Whole Cooked Chestnuts

  • 4 Eggs

  • 1 Bunch Italian Parsley

  • 1 tsp. Celery Salt

  • 1 tsp. Freshly Ground Black Pepper

  • French Loaf

Instructions:

  1. Preheat the oven to 350F degrees.

  2. Spray a 9” baking pan and set aside.

  3. Remove the bread crusts and cut the bread into 1-inch cubes.

  4. In a large bowl, place the bread cubes the chicken stock. Stir the mixture well and make sure all the bread is well coated. Let it sit for at least 30 minutes to make sure all the liquid is absorbed. Stir the bowl occasionally.

  5. Chop up the chestnuts coarsely.

  6. In a medium saucepan over medium heat, combine the bacon and chestnuts. Cook until the bacon is golden brown. You don’t want it crispy though. Stir occasionally during the cooking. Remove from the heat and set it aside for later.

  7. Coarsely chop the leaves of parsley and set aside.

  8. In a medium bowl, beat the eggs well.

  9. To the egg bowl, add the celery salt, pepper, and the newly chopped parsley. Whisk well.

  10. Add the egg mixture to the bacon mixture. Stir really well.

  11.  Pour the mixture into your prepared 9” dish. Make sure to spread the mixture out well and you have an even top.

  12. Cover the pan with aluminum foil. Bake on the middle rack for 40 minutes.

  13. Remove the foil and bake for an additional 15 minutes.

  14. Can be served hot or saved for later.

Note: If you let it cool for later, cover it with foil and bake for 20 minutes at 350 degrees to reheat.
