Ingredients:

  • 1 cup sliced fresh strawberries

  • 1 cup sugar

  • 1/4 cup fresh lemon juice

  • 1 (17.3-ounce) box (2 sheets) frozen puff pastry, thawed

  • Powdered sugar

Instructions:

  1. In a medium saucepan over medium heat, combine the sugar, strawberries and lemon juice. Using a potato masher, mash the mixture until the berries are soft and the sugar is melted.

  2. Increase the heat to high and bring the mixture to a roiling boiling. Keep stirring the mixture until it becomes thick. That should take about five minutes.

  3. On a lightly floured surface, roll out the pastry with flour and roll to smooth the creases.

  4. Spread 1/3 of the strawberry mixture over the pastry.

  5. Roll out the second pastry and place it on top of the first one. Press down carefully to seal the two layers.

  6. Let chill in the refrigerator for 15 minutes.

  7. Preheat the oven to 400F degrees.

  8. Place a piece of parchment paper on a baking sheet.

  9. Cut the pastry into 1 1/2-inch strips.

  10. One at a time, slowly pick up each piece, twist it three times and place it on the baking sheet.

  11. Bake for 20 to 22 minutes. The puffed pastry will turn a golden brown.

  12. Let cool for 12 minutes before cooling.  Dust with powdered sugar.

Note: The remaining strawberry mixture can be refrigerated for up to 5 days safely.
