Ingredients:

1 cup evaporated milk (warm)

1 envelope dry active yeast

1 egg (lightly beaten)

½ cup molasses
-
2 tbsps plus ¼ cup sugar (divided)

1 tbsp vegetable oil
-
4 ½ cups all-purpose flour (divided)
-
1 tsp salt
-
½ tsp plus 1 tsp ground cinnamon (divided)
-
½ tsp ground nutmeg
-
½ tsp ground ginger
-
1/3 cup shortening
-
Vegetable oil for deep-frying
Instructions:

In a large bowl, combine the milk and yeast. Once mix, add egg, molasses, 2 tbsp sugar and vegetable oil. Stir until yeast is dissolved.

In a medium bowl, sift together four cups of flour, salt, ½ tsp cinnamon, nutmeg, ginger, and cloves.

Combine half of your flour mixture and half the milk mixture. Mix together.

Blend in the shortening. Once blended, combine the remaining flour.

On a clean floured surface, knead the dough. Form into a ball and wrap it in plastic wrap. Place in refrigerator overnight.

On a clean floured surface, roll the dough to 1/3-inch thick. Cut the dough into squares. Cover and place in a warm place. Let rest for 45 minutes.

Place a paper towel on a plate for later.

Heat your vegetable oil.. It should be around 375 degrees.

In a small bowl, combine ¼ sugar and 1 tsp cinnamon.

Place a few dough sections in the oil at a time. Do not crowd the oil or they will not cook properly. Squares will puff up. Fry for three minutes and then flip over and fry the other side. Remove from oil and place on the prepared paper towel to drain the oil.

Roll the hot beignets in the cinnamon/sugar bowl. Ready to serve.

How large would you suggest cutting the squares?
I would say about two inches by two inches would be a good size to make them 🙂
Disneyland’s seasonal beignets are amazing! They have some great flavours!
I feel like they are coming out with new flavors all the time in the parks.
