Yield: 6 large funnel cakes
Ingredients:

1 ½ tbsp. baking powder

2 cups all-purpose flour

2 cups milk
-
½ tsp. salt
-
2 eggs
-
1 ½ tbsp. sugar

1 tsp. vanilla extract
-
Vegetable oil
-
Powdered sugar
Instructions:

In a large bowl, mix the eggs, sugar, vanilla, and milk together. Mix well.

In a medium bowl, sift together the flour, salt, and baking powder.

Slowly add the dry ingredients mixture into the wet ingredients mixture bowl. Making sure to stir well when mixing. The batter should be smooth.

In a large pot, heat the vegetable oil. Prepare a plate with paper towel to drain excess oil off the fried funnel cakes.

Using a funnel or ladle, slowly pour batter in a circular motion over the oil. You want to create a spider web effect.

Once golden brown, flip the funnel cake over and fry the other side.

Place on a paper towel to drain excess oil.

Place on a plate and sprinkle with powdered sugar.
Note: Most will give you the option of whipped cream and strawberries.
