Ingredients:

½ cup butter (room temperature)

½ cup brown sugar

½ cup sugar

1 egg
-
1 egg yolk
-
1 tsp. vanilla
-
1/2 tsp. almond extract
-
2 cups flour
-
2 tsp. cornstarch
-
1 tsp. baking soda
-
¼ tsp. salt
-
¾ cup white chocolate chips
-
¾ cup chocolate chips
-
3 tbsp. raspberry jam (seedless)
Instructions:

Preheat your oven to 350F degrees

In a mixer with a paddle attachment, cream together the butter, brown sugar and the white sugar until light and fluffy.

Add the egg, egg yolk, vanilla and almond into the mixture. Mix until all the ingredients are combined.

Add into the bowl the flour, cornstarch, baking soda, and salt. Mix until all the ingredients are combined.

Remove bowl from the mixer and fold in the white and chocolate chips. Do not do this in the mixer or it will break up the chips.

Split the dough into two parts. Rolling out half the dough and sprinkling it with jam. Carefully take the dough into small sections and create 2 to 3 tablespoon size balls. Careful not to disturb the jam too much. Place the balls on a lightly greased cookie sheet about 2 inches apart.

Make a slight indent on top of each ball and place the tray for 15 minutes in the fridge.

Bake for 12 minutes and let cool on a wire rack.
