Ingredients Crust:

1 ½ cups crushed graham crackers

5 tbsp. unsalted butter, melted
Ingredients Cheesecake:

1 ½ cups sugar
-
3 tbsps. flour
-
Zest of ½ orange
-
4 cups cream cheese, room temperature
-
½ vanilla bean, split lengthwise, scraped, and seeds removed (save the seeds)

5 whole eggs
-
2 egg yolks
-
½ cup plain whole-milk yogurt
Instructions Crust:

Wrap an 8-inch springform pan in aluminum foil. It’s best to do two layers.

In a medium bowl, combine the graham cracker crumbs and the melted butter. Mix it together well.

Press the mixture in the springform pan. Press down and make sure it’s firmly pressed into the bottom.

Place in the refrigerator to chill.
Instructions Cheesecake:

Preheat your oven to 300F.

In a small bowl, mix together the sugar, flour and orange zest. Using a fork, mix until the mixture is well combined.

In a large bowl or stand mixer, beat the cream cheese until smooth and creamy.

Into the creamed cheese, beat in the vanilla bean seeds. Beat until well combined.

Into the creamed cheese mixture, beat in the sugar mixture and beat well. Make sure to scrape down the bowl well.

Doing so one at a time, add the eggs, mixing well after every addition. Scrap down the bowl after every egg is mixed in.

Add the yogurt and beat well. Scrap down the bowl.

Place the filling in the prepared springform pan. Loosely cover the pan with aluminum foil.

Place the springform pan in a large roasting pan. Fill the roasting pan halfway up with hot water. Place in the oven and be careful not to spill the water into the cheesecake pan.

Bake for one hour. You want the center to be firm but still slightly wiggly.

Place in the refrigerator for several hours to chill and solidify.
