Ingredients:

1 Cup brown sugar

1 cup water
-
1/2 tsp cinnamon

1/2 cup toasted pine nuts, sliced, almonds, and chopped walnuts, mixed

1 cup raisins

1/2 pound Monterey Jack cheese, cut in 1/2-inch cubes

1 apple, peeled, thinly sliced

1 loaf French bread cut into thick slices

Whipped cream
Instructions:

Grease and flour a 9-inch baking dish

Preheat oven to 350F degrees

In a medium saucepan, boil the brown sugar, water, and cinnamon. Boil for 2-3 minutes. Remove from heat and set aside.

Lightly toast your bread slices. After toasting, break into large pieces.

In a baking sheet, place half the bread slices.

In a bowl, combine the nuts, raisins, and cheese. Layer half the mixture on top of the bread pieces in the baking dish.

Top the nuts with the sliced apples and half the brown sugar. Continue with a layer of bread, then nut mixture, and then a layer of brown sugar. Cover in foil.

Bake for 45 minutes.

Serve immediately with whipped cream.

That’s one thing Disney makes a lot of Bread Pudding. Almost every cookbook I see from them has at least one version in it.
