Gingerbread Mickey (Monorail)

Yield: 3 dozen cookies



  • 1/4 cup unsalted butter

  • 1/2 cup brown sugar

  • 1/2 cup dark molasses

  • 3 1/2 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp cloves, ground

  • 1 tsp cinnamon, ground

  • 3 tsp ginger, ground

  • 1/2 tsp salt

  • 1/4 tsp cardamom, ground

  • 1/2 cup water


  1. In a large bowl, cream together the butter and brown sugar.

  2. Add the dark molasses to the bowl and blend until completely mixed.

  3. In a medium bowl, sift together the dry ingredients.

  4. Add a third of the butter mixture to the flour mixture and mix well. Add another third and mix well. Add the remaining about of butter. Wrap in plastic wrap and place in the refrigerator to chill.

  5. Preheat the oven to 350 degrees and grease the cookie sheet.

  6. On a lightly floured clean surface, roll out the dough and cut into your desired shape.

  7. Place the cookies on the prepared cookie sheet and bake for 8 to 10 minutes. Once complete, cool completely on the wire rack.

Royal Icing


  • 1 Pinch cream of tartar

  • 2 egg whites

  • 3 1/2 cups powdered sugar – sifted


  1. In a medium bowl, add the cream of tartar and egg whites. Beat at a high speed until soft peaks form.

  2. Reduce speed to low and slowly add the sifted sugar. Beat until a smooth consistency is reached.

  3. Frosting will dry hard on the cookie.
