Ingredients Apple Filling:

1 ½ pounds crisp apples

3 tbsp. unsalted butter

¾ cup sugar

¼ cup fresh lemon juice
-
2 tbsps. Calvados (apple brandy)

2 tsp. cornstarch
Ingredients Crumble Topping:
-
1 cup all-purpose flour
-
½ cup sugar
-
½ cup brown sugar
-
½ cup oats
-
¼ cup chopped pecans
-
¼ cup shredded coconut
-
3 tbsp. unsalted butter
Ingredients Manchego Cheese Ice Cream:
-
8 egg yolks
-
¾ cup sugar
-
2 cups heavy cream
-
3 cups half-and-half
-
1 vanilla bean, split lengthwise
-
½ pound Manchego cheese, cut into 1-inch cubes
Instructions Apple Filling:
-
Peel the apples. Once peeled, cut the apples into ¼-inch pieces. Place them aside.

In a large saucepan over medium heat, melt the butter. Add the sugar to the butter and stir for two minutes. The sugar will melt.

Add the apples to the butter mixture and cook for 3 minutes. You want the apples to start to soften.

In a small bowl, combine the lemon juice, Calvados, and cornstarch. Stir until the cornstarch is dissolved.

Add the lemon juice mixture to the saucepan. Cook for 4 minutes while continuously stirring. The juice will thicken. You will serve this warm.
Instructions Crumble Topping:

Preheat the oven to 350F.

In a large bowl, mix together the flour, sugar, brown sugar, oats, pecans, and coconut. Stir the mixture well.

In a small microwave-safe bowl, melt the butter.

Slowly add the melted butter to the flour mixture. Stir well to incorporate.

Place the mixture into an un-greased cookie sheet. You want to break up any chunks with your fingers.

Bake for 10 – 14 minutes. The mixture will turn golden brown. Set it aside to cool. It will be a crumbly consistency.
Instructions Manchego cheese ice Cream:

In a large bowl, combine the egg yolks and sugar. Whisk together well. The mixture will become pale and fluffy. Set the bowl aside.

In a medium saucepan over high heat, combine the cream, half-and-half, and vanilla bean. Bring the mixture to a simmer.

Slowly ladle the cream mixture, one cup at a time, into the eggs yolks. You want to whisk constantly.

Pour the egg-cream mixture back into the saucepan. You want to cook it for about 4 minutes. Constantly stirring the mixture. Cook until the mixture coats the back of a wooden spoon. Transfer the mixture to a large bowl.

To the egg-cream mixture, add the cheese cubes and stir well.

Let the mixture cool to room temperature. Pour the mixture through a fine strainer to get rid of any clumps. Throw out the cheese and the vanilla bean.

Place the custard in the fridge.

Place the mixture in the ice-cream maker and follow the machine’s instructions.
To serve the apple crisp:

Spoon some of the apple filings into your serving dishes. Cover with the crumble topping.

Scoop some the Manchego cheese ice cream either on the top of the crumble or on the side.
