Ingredients Streusel:

½ cup sugar
-
½ cup light brown sugar, lightly packed

5 tbsps all-purpose flour
-
¼ tsp salt
-
1 tsp ground cinnamon
-
5 tbsps unsalted butter, softened
-
1 tsp vanilla extract
Ingredients Strawberry-Rhubarb Pie:
-
1 ½ cups sliced fresh or frozen rhubarb
-
2-crust pie
-
1 egg
-
1 tbsp water
-
2 cups fresh sliced strawberries
-
½ cup light brown sugar, lightly packed
-
½ cup sugar
-
zest of 1 orange
-
2 tbsps fresh orange juice
-
2 tbsps all-purpose flour
-
1 tbsp ground cinnamon
Instructions streusel:

In a medium bowl, combine the sugar, brown sugar, flour, salt and cinnamon.

Using a fork or your fingers, mix in the softened butter until the butter is the size of hazelnuts. You want it to look like coarse crumbs.

Add in the vanilla extract and stir until combined. Set the bowl aside.
Instructions Pie:

Preheat the oven to 425F.

If using fresh rhubarb, trim the ends and slice them crosswise. You want them to be ¾-inch pieces. If you are using frozen rhubarb, thaw and drain the rhubarb. You want to remove as much liquid as possible.

Roll out your two pie crusts. Place one on the bottom on the pie tray. Place in the refrigerator for 30 minutes.

In a small bowl, whisk together the egg and water. This will be the egg wash. Set them aside.

In a large bowl, mix together the rhubarb, strawberries, brown sugar, sugar, orange zest and orange juice together. Let the bowl sit aside for 10 minutes.

In the rhubarb mixture, stir in the flour and cinnamon.

Place the mixture into the pie shell.

Brush the mixture with the egg wash you made earlier.

Cover with the remaining pie shell. Seal the edges using a fork.

Using a sharp knife, cut a cross into the center of the pie crust. Pull back the 4 points and press the point into the crust.

Egg wash the top of the pie crust.

Sprinkle the streusel over the top of the pie filling you can see where you pulled back the points.

Cover the pie with aluminum foil and bake for 10 minutes.

Lower the oven temperature to 375F. Bake for 15 minutes.

Remove the foil and bake for another 15-20 minutes.

When the pie is golden brown, set aside to cool.
Note: Disney says to serve the pie cool.
