Ingredients for Muffins:

1 cup cake flour

1 cup bread flour
-
2 tsp baking soda
-
2 tsp cinnamon
-
1 tsp nutmeg
-
2 cups sugar
-
3 eggs
-
½ cup vegetable oil
-
1 5-ounce can pumpkin puree
-
1 cup golden raisins
Instructions for Muffins:

Preheat oven to 375F.

Place paper liners in a muffin pan.

In a large bowl, sift together the cake flour, all-purpose flour, baking soda, cinnamon, and nutmeg.

In an electric mixer with a paddle attachment, beat together the sugar and eggs together. The mixture will become pale yellow.

Slowly blend in the oil and pumpkin. Blend until the mixture becomes smooth.

Combine half the flour mixture into the egg mixture and mix well. Add in raisins. Once combined, add in the remaining flour and mix again.
Ingredients for Streusel:

2 tbsp all purpose flour

2 tbsp granulated sugar

2 tbsp dark brown sugar (packed)

½ tsp cinnamon

1 pinch salt
-
1 tbsp cold unsalted butter
Instructions for Streusel:

In a medium bowl, add all the ingredients. Use a masher until the mixture becomes like coarse crumbs.
Assembly:

Equally, separate the muffin batter in the muffin tray.

Sprinkle the streusel over the muffin batter.

Bake for 18 minutes. Then lower the temperature to 325F and bake for another 5 minutes. The muffins will become golden brown in color.
