Ingredients Pumpkin Beignets:

1/2 tsp dry yeast

1/4 cup warm water (105 degrees)

4 cups all-purpose flour

1 cup canned pumpkin puree

1/4 cup sugar
-
1/4 cup heavy cream
-
1/4 hot water
-
1 egg
-
2 tbsp vegetable shortening
-
1/2 tsp salt
-
vegetable oil for frying
Ingredients Maple Glaze:

3 tbsps butter
-
1/4 cup maple syrup
-
1 cup powdered sugar
Instructions Pumpkin Beignets:

In a small bowl, sprinkle the yeast in the warm water. Stir slightly and let sit for 5 minutes.

In a large bowl, stir together the flour, pumpkin puree, sugar, heavy cream, hot water, egg, shortening, and salt together.

Stir the yeast mixture into the large bowl. Mix the bowl until the dough comes together.

Cover the bowl with a clean towel and let rest for 30 minutes.

On a lightly floured surface, roll the dough out to a 1/4-inch thickness. Cut the dough into 2-inch squares.

Cover the squares with a clean kitchen towel and let the dough rise. Place it in a warm, draft-free for about 1 to 1/2 hours.

In a deep heavy pot, heat 3 inches of vegetable oil to 350F.

Carefully fry each beignet for 2 to 3 minutes. Once the beignet is golden on one side, flip it over and fry on the other side.

Place the beignet on a paper towel to help drain the vegetable oil.
Instructions Maple Glaze:

In a microwave-safe bowl, melt the butter and maple syrup together.

Whisk in the powdered sugar until the mixture is smooth.

Drizzle the maple glaze over the beignets.
