Pears
Ingredients:

4 pears, fresh
-
1 cup water
-
1 cup white wine
-
1 cup sugar
Instructions:

Peel the pears
-
Remove the core from the bottom. You want to leave the stems intact.

In a saucepan, boil the water, wine, and sugar.

Place the pears into the mixture and simmer until the pears are tender.

Place entire saucepan on the heat and let sit to cool.
Sabayon Sauce
Ingredients:

2 ¼ cups Sauternes wine, divided
-
½ cup sugar, divided
-
1 egg yolk
-
1 whole egg
-
2 tablespoons cornstarch
-
2 tablespoons pear liqueur
Instructions:
-
In a saucepan, boil 2 cups of wine. Once simmering, add ¼ cup sugar. Simmer on low heat.

In a medium bowl, mix the ¼ cup wine, ¼ cup sugar, egg yolk, whole egg, and cornstarch together. Mix until the cornstarch is dissolved. Add a little of the hot wine mixture to the egg mixture. Stir quickly and well. Once combined, add the egg mixture to the original wine mixture and bring back to boil. You have to keep whisking or the eggs will start scrambling.

Once thick, remove from the heat and stir in the pear liqueur.
Raspberry Sauce
Ingredients:

1 cup good raspberry preserves
-
1 cup raspberries (frozen and thawed)
Instructions:

In a medium bowl, combine the preserves and strawberries. Beat well.

Run the mixture through a sieve. It will remove all the seeds.
Assembly
-
Drain pears from the syrup.
-
Divide the Sabayon sauce into four serving dishes.
-
Place the pears standing up in the sauce.
-
Top with the raspberry sauce. Enjoy!
