Matterhorn Macaroons

Ingredients:

  • 1 cup room temp butter

  • 1/2 cup granulated sugar

  • 1/4 tsp vanilla extract

  • 1/4 tsp almond extract

  • 1/4 tsp coconut extract

  • 1 cup sweetened, shredded coconut

  • 2 cups all-purpose flour

  • 1/4 tsp salt

  • 1 bag of white candy melts

Instructions:

  1. Preheat oven to 325F

  2. In a large bowl, cream together butter and sugar. You want it to be light and fluffy.

  3. Add to the bowl the salt, flour, and all three extracts. Only mix until combined

  4. Fold in one cup finely chopped coconut.

  5. Form 12 Matterhorn mountain shapes and place on an ungreased baking sheet.

  6. Bake for 15 minutes and then let cool completely.

  7. Melt candy melts as directed on package and dip tip in the cooled Matterhorn into the candy melt.

  8. Sprinkle with icing sugar to make snow effect.

  1. The Matterhorn Macaroons are my favorite! I usually don’t enjoy coconut flavored anything, but these aren’t too strong with it so they’re just delicious 🙂

    1. I’m the same way actually. Sometimes I find the taste of coconut to too strong. You are right about these not being too strong. They are just mild enough 🙂
