Ingredients Cake:

1 ¼ cups sugar

½ cup shortening
-
2 eggs
-
¼ tsp. salt

1 ¾ cups cake flour

2 tbsps. unsweetened cocoa
-
½ tsp. baking soda
-
1 tsp. baking powder
-
1 cup buttermilk
-
4 egg whites
-
¼ cup sugar
Ingredients Topping:

1 Cup evaporated milk
-
1 ½ cups sugar
-
1 cup butter, softened
-
3 egg yolks
-
¼ tsp. vanilla
-
1 ½ cups pecans, chopped
-
1 ½ cups coconut, flaked
Instructions Cake:

Grease and flour 3 9-inch round cake pans. Set the pans aside.

Preheat the oven to 350F.

In a large bowl, mix together the sugar, shortening, eggs, and salt together. Mix until the mixture is light and fluffy.

In a medium bowl, sift together the cake flour, cocoa, soda and baking powder.

Alternating between the shortening mixture and the buttermilk, add them together.

In a medium bowl, beat the egg whites separately with a ¼ cup of sugar. Beat until the mixture is very stiff.

Carefully fold the egg whites into the cake mix bowl.

Equally, separate the batter into the three prepared cake pans.

Bake for 20 to 25 minutes.

Cool the layers on a wire rack until completely cool.
Instructions Topping:

In a saucepan, combine the milk, sugar, butter and egg yolks.

Over medium heat, cook the mixture comes to a boil and becomes thick. This should take about 10 minutes.

Remove from heat; add the vanilla, pecans, and coconut. Set aside and let cool completely.
Assembly:
-
Place a layer of frosting between each layer and a generous layer on the top and sides of the cake.
