Frangipane (Rich Almond)

Yield: 1 Cake

Ingredients:

  • 8 ounces almond paste

  • 1 ¾ sticks unsalted butter

  • 1 cup sugar

  • 6 medium eggs

  • Peel from 1 lemon (grated)

  • 1 teaspoon vanilla

  • 2 ¼ cups all-purpose flour

Instructions:

  1. Preheat your oven to 350F degrees.

  2. Grease and flour and cake pan of your choice.

  3. In a medium bowl, combine the almond paste, unsalted butter, and sugar. Mix well.

  4. Doing so one at a time, add the eggs and mix really well after every addition.

  5. Add the lemon peel and the vanilla. Mix well.

  6. Mix in enough flour to incorporate. If you mix in too much you will make the dough tough.

  7. Pour batter into prepared cake pan. Bake for about 20 minutes. It will depend on pan used. The cake is done when a toothpick can be inserted in the center and it comes out without batter on it. Cool before serving.

  8. Serve immediately.
