Graham Cracker Crust
Ingredients:

1 cup graham cracker crumbs

1 tablespoon sugar
-
4 tablespoon butter
Instructions:

Grease a 9-inch springform pan.

In a large bowl, combine all the ingredients. Mix really well.

Press mixture into the bottom of the pan.
Filling
Ingredients:

4 8-ounce packages cream cheese
-
2 cups sugar
-
1/8 tsp salt
-
1/2 tsp lemon extract
-
4 eggs
Instructions:

Preheat oven to 350F degrees.

In a large bowl, cream together the cream cheese, sugar, salt and lemon extract. Cream until smooth.

Add eggs one at a time. Blend well after every egg. Being careful not to over mix the batter.

Pour into the pan over the graham cracker crust. Bake for 45 to 50 minutes. The cheesecake is ready when it is set in the middle.

Cool on a wire rack for 30 minutes.

Place in refrigerator and let chill.
Sour Cream Topping
Ingredients:

1 cup sour cream
-
2 tablespoon sugar
-
Fresh fruit
-
Fresh whipped cream
Instructions:

In a medium bowl, mix together the sour cream and sugar together.

Spoon the mixture over the chilled cheesecake.

Top with fresh fruit and whipped cream.
