Choux Fritters

Yield: 3 Dozen


  • 1/2 cup butter

  • 1 cup boiling water

  • 1/4 tsp. salt

  • 1 3/4 cups flour

  • 4 eggs

  • 4 cups vegetable oil

  • Sugar


  1. In a large saucepan, boil the butter, boiling water, salt, and flour. Keep stirring as fast as you can. When it pulls away from the sides, remove from the heat. Let cool for a few minutes.

  2. Add one egg at a time and mix really well with an electric mixer after each egg. The mixture will come apart after every egg but keep mixing. It will become thick again.

  3. Heat your oil to 375 degrees.

  4. Dip a large spoon in the oil and then scoop up some dough. Carefully drop the dough into the oil. Fry until it is golden brown.

  5. Remove from heat and sprinkle with sugar. Serve the fritters hot.
