Pastry
Ingredients:

2 cups flour
-
1/2 tsp salt
-
6 tbsp. solid vegetable shortening

2 tbsp. butter, chilled

1/2 cup (or as needed) orange juice, chilled
Instructions:

In a medium bowl, sift together the flour and salt.

Cut in the shortening and butter. Cut in until the flour is crumbly. The fat should be the size of chestnuts.

Add orange juice slowly. Just add enough orange juice for the dough to hold together. Knead slightly and separate into two balls. Wrap in plastic wrap and place in the refrigerator to chill well.
Filling
Ingredients:

3 Pounds baking apples
-
1 lemon, juiced
-
3/4 cup sugar
-
1 tsp cinnamon
-
1/8 tsp salt
-
4 tbsp. butter
Instructions:

Preheat your oven to 425F degrees
-
Core, peel and cut apples into 1/2-inch slices.

In a large bowl, place the apples, lemon juice, sugar, cinnamon, and salt. Make sure the apples are coated and let sit for 10 minutes at room temperature to really soak.

On a clean floured surface, roll out one ball of dough you made earlier. Cover pie dish with the dough.

Pour apple mixture into the pie plate and plate cubes of butter on top of the apple mix.

Roll out the second pastry dough and cover the pie plate. Seal the edges and make prick the top of the pie dough to allow steam to escape.

Bake for 10 minutes.

Reduce the heat to 350 degrees and bake for an additional 40 to 50 minutes.

Let cool on wire rack before serving.
