Today we are making some Snowman Shortbread Cookies from our Disney Eats Holiday Treat Challenge.
When I was first trying to figure how to make these I thought it was going to have to figure out a copycat recipe. I didn’t think there was any chance I would find the official recipe since the cookies just came out. Usually, we have to wait months before Disney releases it. Not this time! The other day I was searching through Instagram and there it was! I couldn’t believe it. Between the doggie pictures and travel destinations way out of my price range, Instagram user @adventurestodisney had been given the recipe from the parks. I was stoked and thanked her.

Whenever I think of Disneyland I instantly get a smile on my face. This incredibly warm wave of happiness rushes over me. You know the feeling I’m talking about. I imagine strolling down Mainstreet U.S.A, one hand holding my husband’s hand, and the other holding a Mickey Ice Cream Bar. Goodness, I love those things.
Pharrell Williams said “clap along if you feel like happiness is the truth,” and that’s exactly what I feel like when I’m there. Truthfully, honestly, and happy.

I have to admit I made these cookies as a late night snack. I didn’t really think much about them. It was just one of those situations where I looked for a recipe I had all the ingredients for. I later heard three separate people say they were the best cookies they have ever had. They also requested when we make chocolate chip cookies in the future, we make these ones.

Sometimes I’m awful for not fully reading a recipe before heading to the store to buy ingredients. That is literally rule number one in culinary school. The chefs would shake their heads at me and make me clean everything in a sight if they knew. Always read your recipe.

This weekend is Canadian Thanksgiving or as I like to call it; Thanksgiving number one. Since I’m Canadian and my husband is American, we celebrate twice a year. That means at least twice a year I eat to the point I feel like my stomach is going to explode… and then I eat some more. I know I’m not alone on this. Why do we do it to ourselves? Every year I tell myself I’m going to eat a responsible amount and BAM I turn into a bear trying to get enough energy for hibernation.

Disney Parks Blog released the cutest new treats coming to Disneyland Park for Gay Days. Of course, the Disney Parks Blog will never say that’s what it’s for but new rainbow food that just happens to be released October 5-7th (Unofficial Gay Days in the park) seems pretty coincidental.
