Not Too Scary Berry Pancakes Review

Hey DisBakers,

So today is the first recipe from our new cookbook called “The Magic Kitchen Cookbook” and it’s Monsters Inc themed. Remember a week ago I told you we were starting to do every sweet and baking recipe in the book “tomorrow”? Well tomorrow is a week later and we are just starting. I don’t have an excuse, I just got excited about the baking and eating part and didn’t get around the writing part. Eating is just so much fun. Which is very apparent by my waist size but I’m getting off topic now.

I think Disney stretches with these themes to the recipes. I don’t mean with just this book but with all their non Park recipe cookbooks. They just know it needs to be attached to some movie so adults will buy it. I have to admit it does make things cuter but what carrot cake has to do with Tarzan is a mystery to me. Geez I’m off topic today.

Blue Berry Pancakes

These blueberry pancakes are Monsters Inc themed but they are simply blueberry pancakes. Here’s a secret, you can make them Blue Fairy themed if you want. You can do it crazy baking rebel you. Hey maybe I’m wrong, I haven’t seen the movie in a long time but I don’t remember Pancakes playing a big role in Monsters Inc. I also can never remember if it’s Big Hero 5 or 6 so maybe you shouldn’t come to me for movie references either.

You’ll notice one thing to start, my pancakes look like they have been ran over compared to theirs. I’m going to give it the benefit of the doubt and say maybe my baking powder was too old, but they were no where near as fluffy. It didn’t matter how many or how loud I yelled at them.

Blue Berry Pancakes

Ok let’s make these biatches… remember when that was a cool thing to say? Ya me neither, I’m not old…


  • 1 cup white whole wheat or all-purpose flour
  • 2 tbsps sugar
  • 2 tsps baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 cup fat-free milk
  • 2 tbsps canola oil
  • 1 cup fresh or frozen blueberries
  • 1/4 cup chopped Walmart’s (if you like)
  • Nonstick cooking spray
  • 2/3 cup frozen light whipped dessert topping, thawed
  • 1/2 cup vanilla low-fat yogurt

Right before we get into the instructions, I just wanted to mention a few things. I didn’t add the Walnuts. My husband acts like I’m feeding him dirt if I try to give him a walnut. I don’t know what he has against the delicious nut, but it’s some serious issues they need to sit down and talk about one day.

Secondly I used frozen wild blueberries for no other reason but I had them. So you might notice the blueberries in my picture are smaller than normal. Ok back to baking now.


  1. In a medium bowl, sift together the flour, sugar, baking powder and salt. Stir. With a wooden spoon if you have one.
  2. In a medium bowl, beat together the egg, milk and oil. Use a fork to beat until everything is properly mixed. Even those small bits of yolk that somehow hide at the bottom of the bowl every single time.
  3. Mix the wet mixture into the dry mixture. You want to stir until it’s almost but not completely smooth.
  4. Gently stir in 1/2 the blueberries. This is where I call BS on the Disney picture. Anyone who has stirred blueberries into batter knows if you stir at all hard it turns everything purple. The picture in the book doesn’t have a speck of it. Which leads me to think they used the trick of rolling the blueberries in a bit of flour first. That will stop the bleeding. I didn’t do this because I was trying to follow the recipe exactly.
  5. In a small bowl, mix together the dessert topping (which let’s face it, Cool Whip) and yogurt together. Set aside.
  6. Lightly coat a griddle with nonstick spray. I used a frying pan. I don’t own a griddle. Put the heat to a medium heat and wait for it to heat up.
  7. Each pancake should be about 1/4 cup of batter. I found this batter very liquid and it spread out pretty quickly. Cook until the pancake edges are dry and the top is bubbly, flip and do again. Each side should take about 2 minutes. Plate.
  8. Spoon a solid lump of the whipped topping on each pancake stack and get fancy decorating with the rest of the blue berries.
