When you run a blog you can see the top pages readers click on. It’s useful to see what type of recipes you guys are interested in. Most will make sense. Around Christmas a lot of cookie recipes, in the fall pumpkin pies, but one recipe is busy all year ’round; Bran muffins. Yup, good old bran muffins.
I can only assume it’s because Bran Muffins are a pretty staple recipe in most families. I think most of us have grown up on them. If you didn’t, then you probably had one at a coffee shop that day you decided to eat healthy. Right before you went to McDonald‘s and had the Big Mac combo with the Diet Coke of course. Always the Diet Coke.
I figured since you guys are looking them up so much, we needed to make them. They are actually the simplest recipe in the world to make. Like getting Donald Trump to tell you his opinion on something. It just takes a second.
These are from Farmers Market in EPCOT in Walt Disney World. The place doesn’t exist anymore but you will know the area as Sunshine Seasons. The food court type quick service in The Land in Epcot. I found the recipe in Mickey Gourmet Cookbook from the Disney Chefs. It’s an older Disney Parks cookbook but it’s one of my all time favourites.
One thing I will note before we start, once you mix everything together, do not be concerned if the batter is really running. I’ve made this recipe twice and both times it was super soupy. Both times the muffins turned out perfect. So don’t be to concerned about it.
Bran Muffins
Farmers Market – The Land – EPCOT – Walt Disney World
Ingredients:
- 2 cups bran flakes
- 1 cup milk
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup honey
- 3 eggs
- 1 cup all-purpose or bread flour
- 1/8 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup raisins
Instructions:
- Preheat your oven to 400 degrees.
- Place paper cupcake liners in your muffin tray. This recipe made about 16 muffins. It always depends on much you fill them, and how big your muffin tray is.
- In a big bowl, mix together all the ingredients. Super easy.
- Using a stand mixer or hand mixer, mix together on medium speed. This cookbook say for about 5 to 7 minutes.
- Bake for 20 minutes.
- Let cool on a wire rack.
