Will O’ the Wisp Cookies

Hello Bluetiful bakers… see what I did that?

So I was looking for something fun and quick to make. Something I already had the ingredients for and would be easy to make.

I headed over to the Disney Family website and found these super cute little blue wisp cookies. The picture looked adorable and I love meringue.

These little cookies were inspired by the movie Brave and are a great treat for the Merida lover in the family.

As you can pretty obviously see from the picture, they came out looking like smurf poop. They look exactly like the emojis, but they are blue. At first, I thought it might just me. I was tired and decided to ask my husband. He had one peak at them and confirmed we had blue smurf poop in the oven.

They were very minty. They tasted exactly like peppermint, which makes sense because that’s one of the few ingredients. My husband thought they tasted exactly like toothpaste. They were light and airy.

What you will need;

  • 4 egg whites, room temperature

  • 1 cup of sugar

  • 1/2 tsp cream of tartar

  • 1/4 tsp peppermint flavoring

  • 15 drops blue food coloring (or you can use gel food coloring like I did)

Let’s make some Will O’ Wisp Cookies

  1. Preheat your oven to 200F.

  2. Cover a baking sheet with parchment paper.

  3. In a stand mixer with a whisk attachment, beat the egg whites and cream of tartar. When placing the eggs in the bowl, make sure there is no egg yolks get in the bowl or it won’t work well. The mixture will become light and frothy if properly done.

  4. Once frothy, add the sugar 1 tablespoon at a time. I just slowly shake it into the bowl while the mixer is whisking on high. Beat for about 6 minutes. You want stiff peaks. Make sure to scrape down the sides every few minutes.

  5. Add the peppermint flavoring and food coloring. Beat until combined.

  6. Place a large tip in a piping bag. You can also cut a corner off a large ziplock bag. If you have a piping bag it will be easier.

  7. Pipe the mixture in 2 to 3-inch tall swirls on the parchment paper. You want to leave at least an inch between each meringue.

  8. Bake for 1 hour and then let cool on a wire rack. Cool completely before serving them.
