Apple Strudel with Filo Dough

Sometimes I’m awful for not fully reading a recipe before heading to the store to buy ingredients. That is literally rule number one in culinary school. The chefs would shake their heads at me and make me clean everything in a sight if they knew. Always read your recipe.

I set out to make Walt Disney World Germany’s pavilion famous Apple Strudel. It happens to be my husband’s park favorite. Well since I didn’t fully read the recipe and didn’t realize it needed to chill in the fridge for a while So on to plan B; Apple Strudel with Filo Dough from Disneyland Hotel.

Don’t get me wrong, this is not a second class dessert. It’s an awesome and super popular treat. Reining from Caffe Villa Verda in the Disneyland Hotel, the restaurant may be gone but thank goodness older Disney recipe cookbooks still carry their dishes.

The recipe will yield one Apple Strudel, it will serve 2 big awesome servings or four people a light after dinner snack.

One thing about this recipe before you start is if you have never used filo pastry dough, get your patience ready because filo pastry can be touchy to work with. It’s pieces of dough that can rip super easy. You have to find a perfect balance between going slowly and going fast at the same time. Just don’t get frustrated, you’ll find the flow and speed that works for you.

Ingredients:

  • 1 pound apples (thinly sliced)

  • 1/3 cup sugar

  • 1/2 tsp cinnamon (ground)

  • 5 sheets filo dough

  • 1/2 cup butter (melted)

  • Whipped cream or custard sauce

Instructions:

  1. Preheat your oven to 400 degrees.

  2. Prepare your apple. You want to peel and core the apples. Cut the apples into four wedges and then cut them into thin slices.

  3. Place the apples in a large bowl and sprinkle two-thirds of the cinnamon and sugar. Toss your apples until they are well covered. Set your bowl aside for later.

  4. Lay down a clean table on your table or counter. Place a single layer of filo dough over the towel. Very gently brush the dough with melted butter. If you rip the dough don’t worry too much, just keep on going. Lay another layer of filo dough, brush with butter and keep going until all five pieces of dough are placed. When you are placing the dough, try your best to line up the sheets.

  5. On the upper third of the film dough layers, place the apple mixture.

  6. Cover the apples with the remaining cinnamon sugar.

  7. Here’s the really tricky part, use the towel to lift the dough to roll the dough. You want to roll it as tight as possible around the apple slices.

  8. Butter your baking sheet, and place the strudel on the sheet with the seam side down. This will stop it from unrolling while cooking. Brush the top of the remaining melted butter. This will give the strudel a nice shine. Sprinkle with a little more cinnamon sugar mixture on the top of the roll.

  9. Bake the apple strudel for 30 minutes or until it becomes golden brown. Mine took exactly 30 minutes. Serve with whipped cream or custard sauce.

When you cut into the strudel it will crack and not slice perfectly. If you are someone who needs slices to be perfect, this might not be the dessert for you. With that being said, if you love flaky desserts with a cinnamon sweetness, then this is the perfect dessert for you. It does make a little bit of a mess when you cut into it.

Once you get the hang of this strudel it’s actually a pretty quick dessert and people are super impressed with it since it’s not something people make all the time. Go be the fancy friend and the pastry chef of your family.
