Tinkerbell Mini Cupcakes

These cupcakes are just so easy and adorable to make – I only had one left to take a picture of by the time my family found them!!!
It’s not easily photographed – but these cupcakes are covered with a fine layer of shimmer dust – I mean pixie dust! – and they sparkle and shimmer just like real pixie wings, so they’re sure to be a real favourite!!!

Ingredients
  • 1⅓ cup self-raising flour
  • A pinch of salt
  • ½ cup milk
  • A few drops of vanilla essence
  • ⅔ cup white sugar
  • 1 cup Apple Puree
  • small edible pearls
  • 1 Tb shimmer dust
  • 4 sheets white edible paper
  • 140g butter
  • 280g icing sugar
  • 1 Tb milk
  • Green food colouring

(If you’re using bought green buttercream frosting than you can disregard the last four ingredients)

Method

  1. Heat your oven to 175°C (approx 350°F) and line a mini cupcake tray with cases (you can also use this recipe to make normal-sized cupcakes without any ingredient adjustments)
  2. In a small bowl, mix your salt and flour, then set aside. In a separate bowl, mix together your milk and vanilla essence, set this aside too.
  3. In a large, microwave safe bowl, mix your melted butter, sugar and egg together until fully incorporated. In batches, add your dry ingredients and flour to this mix – alternating between wet and dry until everything has come together.
  4. Scoop 1 tablespoon of mixture into each cake case, and then bake for 10 minutes or until cupcakes have risen and are slightly springy to the touch. Allow them to cool for twenty minutes before continuing with this recipe.
  5. Beat the frosting butter in a large bowl until it has softened. Add half of the icing sugar and beat again – until smooth. Then add the other half and just one tablespoon of milk and beat again until the mixture is smooth and creamy. If it’s still a bit too thick add in some more milk, bit by bit until you reach the right consistency. Stir in the food colouring until you reach a bright, Tinkerbell green.
  6. Using a star-shaped nozzle, pipe a large swirl in the middle of the cupcake. Cut your edible paper into half, and then half those halves again until you have four, large, rectangular pieces. Fold these carefully in half and then cut out a simple wing shape – be sure to leave approximately 1.5 cm untouched along the folded edge (It doesn’t matter too much if you wind up with two, separate wings for one cupcake.
  7. Before you place your wings – sprinkle some shimmer dust lightly over the frosting.
  8. Carefully set your wings on the side of your cupcake – being sure to angle them slightly so they sit just like real wings! For a final touch, add two little pearls just beneath the wing edges for Tinkerbell’s famous pom poms!
  9. Enjoy!
