Hi beautiful bakers!
As long as we have been dating, I’ve been trying to convince my husband that Canadians are not British.
This has been a running discussion throughout our relationship. My husband was born in the southern United States and I am a born and raised Canadian. The topic started as a joke the first time we meet. He insisted we Canadians eat like the British; something about tomatoes with breakfast. I took the hard stand we are not. Then in our first year of dating, I brought him to a horse show and the crowd stood for “God Save the Queen” and again I proclaimed we were a colony once but not anymore more. We properly asked for independence and we received it. I felt like this day was a big hit to my argument.
Well, now that we have moved back to Canada it’s becoming harder and harder to make my point. The royal wedding. This darn thing has made it impossible for me to argue my point. The country is losing their mind about Prince Harry getting married. So much so that at 4 am my mother has planned a breakfast for the two of us to watch the wedding. Let me correct that; 4 am is the pre-wedding stuff. The actually darn thing only starts around 7 am. She is so excited.
So this is me waving the white flag and saying God Save the frigging queen.
What does all this have to do with “Chip’s Bite- Size Cookies” inspired by the movie Beauty and the Beast? Well, nothing actually. I just had to admit it to someone and I sure as hell wasn’t going to admit it to my husband.
Ingredients:

2 cups flour

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp nutmeg
-
1/2 cup brown sugar
-
1/2 cup white sugar
-
3/4 (12 Tbsp) butter, softened

1 egg
-
1 tsp vanilla extract
-
2 cups semisweet chocolate chips
-
1/2 cup chopped chips
-
1/2 cup chopped walnuts (Optional)
Instructions:

Preheat over to 350F.

Line a baking sheet with parchment paper.

In a small bowl, sift the flour, baking soda, salt, and nutmeg.

In a large bowl, sift the brown sugar and white sugar. Add the softened butter and mix until well combined. It will be light and smooth.

Into the butter mixture, add the egg and vanilla. Mix well.

Add the flour mixture into the butter mixture in two parts. Mixing between each addition.

Fold in the chocolate chips and chopped walnuts (optional) in the dough.

Make a tablespoon size ball of dough and place 1/2 inch apart on the prepared baking sheet. Press down very slightly on each ball.

Bake the cookies for 7 minutes. Let cool on the pan for two minutes and then transfer to a wire rack.
This super easy Disney inspired recipe is perfect for any kids party. It’s an easy recipe for any event really. It has the secret surprised of nutmeg too. People wouldn’t expect that in an average chocolate chip cookie.
