Peanut Butter Dumbo Dunkers

Hello happy bakers!

I know it’s been a little while since I’ve posted another recipe in our April cookbook challenge. I wish I had some fantastic reason like I was off saving puppies from burning buildings or I was busy being a stylist on RuPaul’s Drag race.

Those would have been awesome reasons. The honest reason is simple; I couldn’t figure out where the hell I put it. We just moved and I feel like everything we own is everywhere. I can’t find anything and it’s driving me nuts. I feel like I have something in my hands and BAM it’s gone. Just literally disappeared forever. For the record, I still can’t find the book, but I did find a photocopied version I made for some reason. I don’t know why I did it, but I’m sure happy I did.

So these are basically just like peanut butter cookies. Okay, they are peanut butter cookies but a good one. How much fun is it that they look like elephants?

Let’s make some Peanut Butter Dumbo Dunkers!

Ingredients:

  • 1/2 cup smooth peanut butter

  • 1/2 cup margarine

  • 3/4 cup brown sugar

  • 1/2 cup sugar

  • 3 tablespoons milk

  • 1 egg

  • 1 teaspoon vanilla

  • 2 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/8 teaspoon salt

  • Raisins for eyes and mouth

Instructions:

  1. In a large bowl, cream together peanut butter, margarine, and sugars.

  2. Blend in the milk, egg, and vanilla.

  3. In a large bowl, sift the flour, baking soda, and salt. Mix together.

  4. Slowly add the flour mixture to the peanut butter mixture. Mix until combined.

  5. Divide the dough into two sections and wrap both in plastic wrap.

  6. Place in the refrigerator to chill for several hours.

  7. Preheat oven to 350F.

  8. On a flat surface place a piece of wax paper. Generously flour the wax paper. Place one of the dough sections and cover in flour. Top with one more piece of wax paper.

  9. Roll out the dough to 1/4 inch thick.

  10. Remove the wax paper and you use a cookie cutter to cut circles. Place the circles on a greased baking sheet. These will be the faces.

  11. Cut half circles and place on each side of the head. These are the ears.

  12. Place two raisins for the eyes and one for the mouth. The recipe actually uses candy hearts but surprise I couldn’t find them.

  13. Use the remaining dough to create the trunk.

  14. Use the ridge of a spoon to make eyebrows. These disappeared during the baking process I just noticed.

  15. Bake for 10-12 minutes. The edges will become golden brown. Let cool on a wire rack.

 

The dough is sticker than I would have liked it to be. Once you cut the shapes out, place the baking sheet in the freezer for a few minutes. It will also make it easier to remove from the wax paper.

Once you have created the elephants I would place the tray in the refrigerator again for 15 minutes. The colder the cookie, the less it will spread in the oven.
