When I started hearing bloggers talking about these bacon cupcakes Disney was making I have to admit I wasn’t sure if they would be good. I knew I loved cupcakes and I knew bacon was delicious but I wasn’t sure how they would combine. I knew they were either going to be amazing or super gross. Luckily they turned out really great.
These Piggylicious Bacon Cupcakes are served during Epcot’s Flower and Garden Festival at The Smokehouse Barbecues and Brews Outdoor Kitchen.
I’m not going to do a huge pre-talk about these. Normally I would tell a story before but I think for this one, we should just jump right into it.

Ingredients Cupcakes:

Yellow Cake Box mix
-
Bacon grease
-
12 slices of bacon (cooked and chopped fine)
Ingredients Maple Cream Cheese Icing:

8-ounce package cream cheese
-
1/4 cup butter, softened
-
1 tablespoon real maple syrup
-
2 cups confectioner’s sugar
-
crushed pretzel twists
Instructions Cupcakes:

Preheat your oven according to the directions on the cake mix box.

Follow the directions on the cake mix box. Replace the oil in the recipe with bacon
grease in equal parts.

Fold the bacon into the batter.

Bake according to the cake mix box instructions.

Let cool completely on a wire rack.
Instructions Maple Cream Cheese Icing:

In a large bowl, cream together the cream cheese and the butter. Beat until light and fluffy. You can also use a stand mixer with a paddle attachment.

Mix in the maple syrup.

Add one-third of the sugar to the batter, and mix well. Add the second 1/3 and mix. Add the remaining and mix.

In a piping bag or a large ziplock bag with a corner cut off, place the icing. Pipe the cooled cupcakes.

Garnish with the crushed pretzels.

Super simple right?
I urge you to wait until the end to try them. If you eat a cupcake without icing it’s pretty bland and very not very exciting. After the cupcake has been frosted, it really adds a sweetness the cupcake really needed. Trust me on this!
