Hidden Mickey Pound Cake

Hey there, happy bakers!

So this cake and I went on an adventure the other day. Every since I saw it on the Disney Family webpage, I knew I needed to try it.

I thought it was going to be a simple afternoon snack and according to the recipe would take one hour to make. That turned out to be crap. It took me probably 5 hours to make from start to finish. Here’s how the journey went.

 

The recipe calls for a pound cake mix. I figured that would be something the grocery store would sell. You can get every kind of cake mix there, so I just assumed they would sell pound cake. I make a great pound cake but I figure I would just buy the mix since I needed to make a chocolate version and a vanilla one.

I walk myself to the store confident I would be in and out in 10 minutes. That was until I spent 30 minutes in the baking aisle reading every single cake mix box. Apparently, the huge grocery I go to doesn’t sell a pound cake mix. I even googled pictures of the boxes and called my mom to confirm I’m wasn’t going crazy and they existed. I realized I was going to have to make it.

I go home and can’t find my pound cake recipe. No problem I find a chocolate one on the Food Network Site and it works out great. I bake it, let it cool and use a cookie cutter to cut out Mickey’s heads. Awesome let’s move on.

I then google to find a vanilla cake recipe and found the Martha Stewart one. I think she should know what she is doing. I make the batter and try to pour it over the mickey heads and there are two things that don’t go well. The first is it barely covered half the mickey heads and the second was it was so thick I couldn’t get it to properly surround the chocolate cake heads. Darnit.

Since I can’t remove them from each other. I luckily had an extra pan of the chocolate loaf (since it made two loaves) and cut out new heads. I then remade the chocolate recipe I first made but substituted the cocoa powder for more flour. I pour that over the new Mickey head and think we are in business.

Just as I’m putting the loaf pan in the oven I realize it’s way too full. I barely covered the chocolate Mickey heads and it’s to the top. I knew it was going to spill over as it baked. I said F&*K it and place the loaf pan on a baking sheet. I put both in the oven. It did spill over and I just trimmed it later so no one would know. Except I just told you about it.

All in all, it took about 4-5 hours to make this 1-hour activity. Again, if you had pound cake mix it would have been much much easier. You will also notice in the picture I forgot to put the sprinkles on… it was a baking journey.

 

O.k. let’s get to the actual recipe.

Ingredients:

  • Vanilla pound cake mix

  • Chocolate Pound cake

  • Non-Stick cooking spray

  • Vanilla frosting

  • red food dye

  • red sprinkles

Instructions:

1. Grease a loaf pan. You can either do this with non-stick cooking spray or with butter and flour.

2. Slice the chocolate pound cake into 1 inch thick slices. Place the Mickey cookie cutter in the center and cut a Mickey shape out of the cake.

3. Line up the Mickey head in the center of the pan lengthwise. You want to match up the ears with the ears and the face with other faces.

4. Pour vanilla pound cake batter over Mickey’s heads. Makes sure the batter goes all the way to the bottom. I would actually recommend laying a layer of vanilla batter on the bottom before placing the Mickey heads to make things easier but that’s your choice. Make sure to cover all the Mickeys with the batter.

5. Tap the loaf pan on the counter a few times to help the batter sink into any spaces. You might need to add more batter at this point. I had too.

6. Bake the cake according to your vanilla pound cake recipe. This usually means 1 hour. Bake until golden brown.

7. Let cool completely on a wire rack.

8. Remove from the loaf pan and place on a plate.

9. Mix the red food dye into the vanilla icing.

10. Ice the top of the cooled cake with the now red icing.

11. Sprinkle red sprinkles on top.

 

Even after all the stuff that happens during the baking process. The cake turned out super duper cute. Disney Family’s official Instagram even liked it on our Instagram. I might have geeked out a little when I noticed they had.

  1. I remember when you made this! I would actually like to try this recipe. It would be fun to bring to an event because, as soon as they cut into it, folks will be saying things like, “I can guess which family made this!”
