Hi Beautiful Bakes!

So you might be wondering why we are talking about pancakes on a site that talks about sweet things, well the site is about baking in general. Are pancakes terribly difficult to make? Well no but they are delicious. I don’t know anyone who doesn’t like pancakes.

I debated about making these pancakes because of one of the ingredients in pancake mix. It does not seem like baking to me if you are starting with a base that is what you are trying to create. I talked this over with my husband and he reminded me that’s just the way Disney made them. I said if that’s how they do it in the restaurant then it’s a valid Disney Park recipe.

Top of the World restaurant doesn’t exist the same way it used to but I after thinking about it I can see why they would use a premade mix. Can you imagine how many pancakes they must have made? A shit ton of pancakes!

Let’s make some pancakes!

Ingredients:

  • 1 egg

  • 4 tbsp oil

  • 1/3 cup milk

  • 1/3 cup water

  • 2 tsp Vanilla extract

  • 2 cups buttermilk pancake mix

  • 4 tbsp sugar

  • 1 tsp baking powder

Ingredients:

  1. In a medium-size bowl, combine the egg, oil, milk, water and the milk. Whisk them together well.

  2. In another medium bowl, sift together the pancake mix, sugar and baking powder.

  3. Whisking the entire time, slowly add the pancake mix mixture to the egg mixture. You want to make sure you whisk it well. You want it to be smooth with no lumps in it.

  4. Lightly grease your griddle or pan

  5. Preheat your griddle or pan over medium heat.

  6. Place about 1/4 cup of batter in the pan. Flip it when the top becomes dry. Continue until you have used up all the batter.

We should note that these make thick pancakes. If you want thinner pancakes just add a little water to the batter and it will thin it out.

Happy Breakfast baking Friends!
