Hi, baking peeps!

This is a recipe I have made numerous times and it’s never really worked out well for me. It’s super easy to make and takes no time at all. I did have to make some little adjustments to fill in some missing information.

I found the recipe on http://www.magicalrecipes.net. This recipe site is missing how long to actually bake it which is a pretty important step. If I find a better version of this recipe I’ll post it. I think the quantities might be off too.

The recipe specifically doesn’t state what pan to use but it does say “pans” so we can assume two things. We can assume you need more than one and since it’s banana bread, we will use a loaf pan. The issue is there isn’t enough for two pans, so I put all the batter in one. The sides will be slightly dry but it will at least make for a decent size bread slice.

Since it doesn’t say how long to bake the bread, I’m going to assume again it’s 45-55 minutes because that’s pretty standard for banana bread.

Ingredients needed:

  • 14oz. Flour

  • 6 oz. Granulated Sugar

  •  ¼ oz. Baking Powder

  • ¼ oz. Cinnamon (Ground)

  • 2 Eggs

  • 4 oz. Butter

  • 24 oz. Pureed Bananas

  • ¼ oz. Vanilla extract

  • Pinch Salt

Directions:

  1. Preheat oven to 325F.

  2. Grease and flour two loaf pans.

  3. In a stand mixer with a paddle attachment, mix together the eggs, butter, bananas, and vanilla.

  4. In a medium bowl, combine the flour, sugar, baking powder, cinnamon, and salt.

  5. Slowly mix the flour mixture into the eggs bowl.

  6. Equally, divide the batter into two pans and bake for 45 minutes. You want to be able to place a toothpick in the middle and have it come out dry.

  7. Cool on a wire rack before servings.

Like I mentioned earlier if I find a better version of the recipe I’ll post a follow-up blog post. With the adjustments, I mentioned the bread does turn out well.

Why did I include a recipe that wasn’t fantastic? Well because they are out there, I want to try them so you don’t have too. So you can see what things I changed to make it work.
