Southern Spoon Bread

Hey, beautiful baking people!

I’ve sat here staring at the computer for a while now and I honestly don’t know how I feel about this recipe. I admit I have never had it at 1900 Park Fare, or at least not that I remember. It is one of my favorite places, but the southern spoon bread is not jumping out at me. I did research it online before making it make sure I knew what it looked like.

The issue is neither myself, nor my family can figure out if we like it or not.  I just don’t know. It was… it was… something. People may disagree with me on this, but to me, it tasted like a combination of bread pudding, quiche, and cornbread all mixed together. You can see how that might be confusing. If I had to pick something to say, which I obviously should here, I would say it was ok. Nothing more, nothing less, it was ok.

I think it depends on what you go into thinking it will taste like. Since I made it, I knew there were 5 eggs in the recipe. I expected it to be quiche-like. My husband saw me add corn meal so he expected cornbread. When you eat something but expect something else, it can really throw off your senses.  I don’t want to deter anyone from making it because it honestly wasn’t bad. Maybe in the future, we will make it again and since we know what to expect, we will like it better…. But again we didn’t hate it… erg.

This recipe will make 8 serving the cookbook says. I will say here you can get a lot more out of the recipe. As you probably notice from the picture I made it in a cake pan… I wish I had some fancy baker reason but I just have a real life person reason. That pan was clean and I didn’t feel like searching for another one.  That’s ok by the way. Not very many people are always going to have the appropriate baking dish for everything. Goodness sakes you would need an entire room just to hold it all if you did. I’m been in commercial kitchens that were still missing things. Use what you have and just remember to adjust your baking time. It will still be just as delicious.  If anyone questions you, just say you are adding your own artistic spin on the dish.

Ingredients:

  • 2.5 cups water

  • 0.5 cup butter

  • 0.25 cup sugar

  • 1 tsp salt

  • 1.25 cups yellow cornmeal

  • 1.5 cups milk

  • 5 eggs

  • 2 teaspoons baking powder

Instructions:

  1. Start by preheating your oven to 350 degrees.

  2. Grease and flour your 9x13x2-inch cake pan.

  3. In a medium saucepan, add together your water, butter, sugar, and salt. You want to bring this to a boil.

  4. Slowly add in your cornmeal to the mix. You want to stir it until it becomes thick. This won’t take long at all. When thick, remove from the heat and place in a large mixing bowl.

  5. Blend in your milk.

  6. Then add your eggs.

  7. Then add your baking powder.

  8. Pour batter into the prepared cake pan and bake for about 45 minutes. It will become golden brown. Mine took an additional ten minutes so keep that in mind.  Maybe my oven was feeling tired that day.

And Voila Southern Spoon Spread! My husband is from the south and I asked him if he had ever heard of it, he hadn’t. I’m not sure what part of the south it’s from or if it’s just a name to make it sound fancier.
