Hi, my baking friends!
I love old school Disney Cookbooks. I am constantly searching Amazon for new ones. I’m not going to pay a fortune for them but I get super excited when I find one that’s reasonably priced. I buy them used and haven’t had an issue with them. It’s an exciting bit of mail to get.
This banana bread is my hands down favorite Disney makes. It always turns out and it’s delicious. There is nothing super fancy about it, but that’s not why you want banana bread. It’s supposed to be a comfort food. Comfort food shouldn’t’ be complicated.
I never got to experience the Monorail Café in the Disneyland Hotel. I have only heard good things about the extinct café. Since I try a lot of older recipes, I’ve made quite a few snacks from this place. They have all been tasty.
Let’s make my favorite banana bread!
What we need:

2 sticks butter

2 cups sugar

2 eggs
-
2 tsp water
-
2 cups bananas (mashed)

¼ tsp vanilla extract

3 cups flour
-
½ tsp salt
-
2 tsp baking soda

1 cup walnuts
Instructions:

Preheat oven to 350F.

Grease and flour 2 loaf pans.

In a medium bowl, combine the flour, salt, and baking soda.

Melt the butter on the stove or in the microwave.

In a stand mixer with a paddle, cream together the butter and sugar.

Add one egg at a time into the butter mixer. Mix well.

Add the bananas and vanilla. Disney forgot to say when to add the water, so I added it here.

Fold the flour mixture into the banana mixture until all the flour is blended in.

Bake for 1 hour until a toothpick can be placed in the middle and comes out dry.
You need to make this bread. It’s just that good!.
