Hey Beautiful Bakers!

      Sometimes it’s fun to find a random recipe and surprise your family. I like to pick a random Disney cookbook or pick the 6th recipe I find on Disney Parks Blog. That’s what I did today and of course, I landed on cookies.

      Cookies and I are magically connected in some way. Cookie recipes always find me.

     My husband brought half the cookies to his office and they proclaimed they were the best chocolate cookies. Of course, they are a bunch of single men so I’m not sure how high the standards are. There probably isn’t a ton of baking going on in their homes. That’s not to say that there isn’t something fantastic about a man who bakes. If a man brought me freshly baked donuts on our first date I would be so excited. I’d be slightly scared it was poisoned but excited also. Who doesn’t love donuts?!

Let’s get to the baking my Disney people!

Ingredients:

  • 2 1/2 cups flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 10 tbsp softened butter

  • 1 cup packed brown sugar

  • 3/4 cup powdered sugar

  • 2 eggs

  • 2 tsp vanilla extract

  • 12-ounces semi-sweet chocolate chips

Instructions:

These cookies are super easy to make and don’t take much time at all. This would be a fantastic one to make with the kids.

  1. Preheat your oven to 330F.

  2. In a medium-size bowl, sift together the flour, baking soda and salt together. Stir until well combined.

  3. In a stand mixer or using an electric mixer, cream together the butter, brown sugar and powdered sugar. The mixture will become light and fluffy. Next, add one egg and mix well. Add the remaining egg and mix until everything is combined.

  4. To the butter mixture, add half the flour mixture and mix well. Scrap down all the sides and add the remaining flour. Mix well. This part you can do with the electric mixer to ensure everything is well blended.

  5. Using a wooden spoon/ spatula, stir in the chocolate chips. You never want to do this with a mixer. It will break apart the chips.

  6. On a baking pan, scoop 1 tbsp size dough balls and place them 2 inches apart on the pan. Do not press down on them. They will flatten while baking.

  7. Bake for 10 minutes. The cookies will become light brown and that’s how you know they are done.
