Ingredients Pie Crust:
- 1 Cup Oreo Crumbs
- 1 1/2 Sticks of Butter
- 1/2 Cup Sugar
Ingredients Bottom Layer – Cappuccino Cheesecake:
- 1 1/2 Cup Heavy Cream
- 1 1/2 Cup Cream Cheese
- 3/4 Cup Sugar
- 1 1/2 Tbsp Gelatin
- 1/8 Cup Instant Coffee
- 1/4 Cup Warm Water
Ingredients Top Layer – White Chocolate Filling:
- 4 oz of White Chocolate (not chips)
- 1 1/2 Cup Heavy Cream
Instruction Pie Crust:
- In a large bowl, combine all the ingredients. Mix together well.
- Evenly press the bottom into a springform pan.
Instructions Cappuccino Cheesecake:
- In a large bowl, whip the whipped cream until stiff peaks. Set the bowl aside.
- In a large bowl, cream together the sugar and cream cheese.
- Fold the whipped cream into the egg mixture.
- In a small bowl, stir together the gelatin and water.
- In a double boiler, heat the gelatin mixture to 180 degrees.
- Fold the gelatin mixture into the whipped cream mixture.
- Pour into the pan over the pie crust. Spread the mixture so it’s even across the pan.
- Place in the refrigerator to chill for over 2 hours.
Instructions White Chocolate Filling:
- In a double boiler, melt the white chocolate.
- In a large bowl, whip the whipping cream to soft peaks.
- Mix 1/2 cup of whipped cream into the white chocolate and mix well. Mix until the mixture is smooth.
- Mix in the rest of the whipped cream. Mix until the mixture is smooth again.
- Pour the mixture over the Cappuccino Cheesecake mixture. Make sure to spread it out until its even.
- Place in the refrigerator to cool overnight. It will set.
