Ingredients Crust:
- 3 tbsp Margarine
- 1/4 cup Confectioner Sugar
- 1/2 each Egg
- 1 cup Whole Wheat Flour
- 1/8 tsp. Baking Powder
- 1/2 tsp. Vanilla Essence
Ingredients Filling:
- 1 tbsp Margarine
- 1/2 cup Confectioner Sugar
- 1/2 each Egg
- 1 tbsp Evaporated Milk
- 3/4 cup Shredded Coconut
Instructions Crust:
- Grease muffin molds.
- In a large bowl, combine the whole wheat flour, and baking powder. Mix together well.
- Into the flour mixture, cut the margarine into the bowl. Use your fingertips to rub the margarine into the mixture. The mixture should resemble bread-crumbs.
- Add the egg, evaporated milk and vanilla extract. Mix well. The mixture will form a soft dough.
- On a clean and floured surface, roll out the dough to 1/4 inch thick.
- Use a large round cookie cutter to cut rounds. Place one circle in each muffin hole. Place the tin aside.
Instructions Filling:
- Preheat the oven to 400F.
- In a large bowl, mix together the margarine, confectioner’s, and egg really well. It’s best to use an electric mixer.
- Stir in the evaporated milk and shredded coconut. Mix until well combined.
- Fill each prepared shell with filling. Remember to not fill to the complete top.
- Bake for 25 minutes.
